Scratch, my as$

I'm all for making stuff from scratch. (Remember when I baked drunk? Coconut crunch cookies ... from scratch!)

But there are certain foods that I will always "add 1 cup of water and mix." How can you beat that??? I just made these muffins last night. Sure, they have a bunch of sugar but whatever, they taste good.

I like boxed mashed potatoes, too. I don't care what anyone says.

I like mixes, too! I even have a cake doctor cookbook. But when I can't understand the ingredients for all the chems, I feel safer with putting all my own pantry stuff in the bowl. (but you can always sneak a little flaxseed into any baking...)

How you kick the taters? I want to add some spice...
I like baking from scratch- teaches the Boy measurements and crap like that...

Krusteaz also has a mix for fat-free blueberry muffins. Delish!

My dad's pancakes can't be beat, though. Once, he used a mix b/c my mom bought it and he didn't want to waste it. I was honestly offended when I bit into one.

But, for the most part, I dig mixes. Just don't try to fake the funk and pass them off as your own. You'll get busted, just watch.

I think that Creamy Butter mashed potatoes from the box are the Bees Knees sister...and I make almost everything from scratch.

My dad is SUPERB in the kitchen. Unfortunately, I have barely a smidge of the mojo that he has ;)

Thanks goodness! I'm not the only one that loves the potato spuds and bake mixes. Whoohoo! (Cuz, you can list all the funky ingredients from those boxes. I'm still gonna buy 'em, make 'em and EAT 'em!! hee hee)
